Vermentino, Roussanne, Marsanne Vinification with natural yeasts and maturing 70% in small stainless steel vats and 30% in oak barrels by grape variety on fine lees with « bâtonnage » (without the addition of sulphites) for 12 months. Blending and then bottling followed by ageing in the bottle for 24 months before release onto the market.
